Ingredients
For Nalli Korma:
Beef ½ kg
Nalli Bone
marrow ½ kg
3 medium

Ginger
Garlic paste 2 tbsp.
Bay leaves 2

Cinnamon

Green

Tomatoes 3

Yogurt 200gm
Gram masala
powder 1 tbsp.
Dried Plums
Aloo Bukhara 8-10 soaked
Mint leaves
Biryani
Essence ¼ tbsp.
Yellow food
color
Ghee 2 tbsp.
For Rice Boiling:
Basmati Rice
1kg
Boiling
Water as required
Salt tbsp.
Bay leaves 2
Cumin seeds
1 tbsp.
Star anise 2
Cinnamon
sticks 2
Black peppercorns ½ tbsp.
Cooking Oil
1 tbsp.
Vinegar 1 tbsp.
Milk 1 cup
How to Make Beef Nalli Biryani
1: In
boiling water, add salt, bay leaves, cumin seeds, star anise, cinnamon sticks,
black peppercorns, cooking oil and vinegar, it to boil.
2: Add rice
and boil 75% done. Remove water & set aside.
3: In pot,
add cooking oil, onion and fry until light golden.
4: Add
ginger garlic paste and fry.
5: Add bay
leaves, cumin seeds, cloves, cinnamon sticks, black cardamom, green cardamom,
star anise, nutmeg, mace and mix well.
6: Add beef
mix both and mix well until changes color.
7: Add bone
marrow and fry.
8: Add red
chili powder, turmeric powder, red chili crushed, coriander powder, salt and
fry for 4-5 minutes.
8: Add
tomatoes and fry, cover and cook on low flame until tomatoes are soft.
9: Add green
chilies and fry.
10: Add
water and mix well, cover and cook until meat is tender approx. 45-55 minute
11: Now remove
cooked bone marrow and set aside.
Cover and
cook until gravy is reduced to half quantity.
12: Add
yogurt, fry and cook until oil separates 4-5 minutes
13: Add gram
masala powder and mix well.
14: Add
dried plums and mix well.
15: Add mint
leaves, boiled rice, and biryani essence.
In milk, add
yellow food color, mix well and add in it.
16: Add
ghee, cooked bone marrow, cover and steam cook on low flame for 20-25 minutes.
