Nihari Gosht Recipe: Nihari Gosht is a traditional Muslim dish that has slowly took over taste buds of people across the borders. Nihari is a authentic dish which means a slow cooked mutton stew, a popular dish in Pakistan and Bangladesh, Earlier Nihari recipe had myriad variations of spices due to which it was slow cooked over night and served the next morning on special occasions and festivals like Eid. spices and herbs like cardamom, cinnamon, chilies, bay leaves, nutmeg mixed

INGREDIENTS
Meat 1kg
Nihari Masala Mix
7-8 whole green cardamom
1 whole black cardamom
3 inch whole cinnamon sticks
7-8 whole cloves
1 tbsp. cumin seeds
1 tbsp. black peppercorns
½ piece nutmeg
5-6 whole black pepper
½ tbsp. black cumin seeds
5-6 bay leaves
1 tbsp. ginger paist
Salt
1 tbsp. red chili powder
1 tbsp. turmeric powder
4 cup water
Oil ½ cup
How To Make Recipe
1: Sauté all of the whole
spices in a frying pan for 2-5 minutes. Constantly. The aroma will indicate
when you should take them out of the pan.
2: Grind all of the spices
to a fine powder and mix with the powder spices.
3: Heat ½ cup cooking oil
in your pot
4: Add and sauté the
garlic for 1-2 minutes
5: Add the meat and the
nalli and roast till no longer red
6: Add the ground spices
and 7-8 cups of water and bring to a boil
7: Lower heat to medium and
cook for 3 hours
8: Prepare a slurry with
the remaining 2 cups of water and flour and add to the Nihari, constantly
stirring to prevent any clumps forming. Cover and simmer for another 30 minutes
Thinly slice and fry the
onions in a 1/2 cup of oil to a dark brown. Pour the onions and oil on the
Nihari cook 30 minutes.
Nihari ready.
Note:
The flour to use here is
known as (Aatta) in Pakistan. It has a distinctly nutty taste that's slightly
different from other flours and should not be substituted.
